How to Brew Masala Chai
A little care makes each cup your own. These recipes are starting points—adjust to your taste and follow your package and brewer instructions when they differ.
One cup
Use: 3 g loose tea and 8 fl oz / 237 mL fresh water at 200–212°F (93–100°C). Leaf size varies, so a scale is more reliable than a teaspoon.
- Place the tea in a roomy infuser in a heatproof mug or teapot.
- Add the hot water, cover, and steep for 4–5 minutes.
- Remove the infuser or strain completely. Let it cool to a comfortable sipping temperature.
Promise Table tip: For an easy chai latte, strain the brewed tea, add 4 fl oz warm milk, and sweeten to taste. Warm the milk separately rather than boiling the tea for a long time.
For a stronger cup, use a little more tea next time instead of extending the steep indefinitely.
